Start your day off with a (vegetable) rainbow
And no, I’m not talking about the rainbow marshmallows in Lucky Charms cereal. Did you know eating a balanced breakfast means eating a serving or two of fruits and vegetables per meal? A lot of people are confused when I recommend vegetables at breakfast.
Let me give you some breakfast ideas to add some mother nature to your morning.
Omelets and Scramblers
Get creative with adding fresh (or frozen!) vegetables in with your morning eggs. Not only will you get a serving of protein from the eggs, but it’s a great way to add in fiber, antioxidants and vitamins/minerals to start your day off right. Try peppers, onions, mushrooms, spinach or jalapenos to get a garden variety.
I’ve posted my favorite breakfast smoothies before and this is a great opportunity to get vegetables in your day without even really tasting them! Does my 4-year-old know he is drinking carrots? I tell him, but I know he doesn’t believe me, and that’s OK with me. Add in some radishes or leeks for an added morning boost!
Pancakes or Waffles
What kid (or adult) doesn’t love a good pancake for breakfast? Add to your batter to make it better! (see what I did there??) Add in grated carrots, zucchini, squash to any batter to help increase vegetable consumption. Have you ever tried adding veggies to whole wheat muffins?? It’s a WIN-WIN!
Know what is better than a regular breakfast burrito? A healthy breakfast burrito. Roll up some eggs, red peppers, avocado, onions and low-fat cheese into a whole wheat tortilla and BAM – breakfast to go just got even healthier. Try adding in a sweet potato hash for even more goodness.
Oatmeal – or Acai Bowls
Everyone knows to mix in fruit with oatmeal in the mornings. But have you ever tried veggies? Get creative and dice up some tomatoes, broccoli, arugula, dates, raisins, etc. Do you know what else is great in a bowl? Acai! Add spinach, cucumber, mint, anything! This is a great way to add some color to your mornings
Get a whole wheat English Muffin or some whole wheat bread. Toast it. Add some tomato slices, spinach, avocado and some turkey bacon and you have a Good Morning BLT! This is another great way to get creative with veggies. Add some hummus and cucumbers to a sandwich or even try peanut butter and celery. Either way, you are winning!
See? I told you that you could do it. Try one of these ideas once a week to get on the right foot to a healthier you. Remember, serving size matters. Also, the more color, the better! Have fun!
